Easy and Delicious Crispy Sweet Potato Tots
CRISPY SWEET POTATO TOTS as per Ellaโs request! Ella can be picky about food but she loves these tots. ๐๐ These sweet potato tots offer just the perfect amount crunch and a soft center. They are sweet and savory and wayyy easier to make then you think!
1 large potato feeds my family of 3, however increase this recipe as you like - as a busy dietitian and mom, I often make more and freeze them for a quick snack or side dish with lunch and dinner. Major YUM factor, totally reinvented toddler and kid food the whole family can enjoy. ๐๐จโ๐ฉโ๐ง
Ingredients
1 large sweet potato
1/4 cup of grated parm
1 cup of Panko crumbs
1 tsp of garlic powder
1/2 tsp of oregano and salt
1 tsp of chili powder (or smoked paprika)
Optional to add a drizzle of olive oil before baking. I find itโs not needed.
Method
preheat oven to 425, bake potato for 50 minutes or until cooked through. Once cooled, remove skin and mash with a potato masher, add all other ingredients, shape about 1 tbsp of sweet potato tot mixture into tot shapes. Spread out on parchment lined baking sheet. Bake for 10 minutes or so on each side, flipping inbetween.
